Pastry Chef - 01/11/30

As Pastry Chef, you will be responsible for the pastry section of the establishment while working closely with the Executive Chef. The Pastry Chef will also be responsible for planning production and developing seasonal offerings. Responsible for the creation of the entire sweet section of the hotel, the Pastry Chef ensures high quality, standard recipes and presentations to maintain quality standards and product consistency within the hotel. He/she is responsible for the production and maintenance of pastry and dessert stocks, ensuring adequate product rotation and maintaining high standards of cleanliness and hygiene in the pastry shop.

Compétences requises:   - Manage all daily operations of the pastry and bakery section of the kitchen. - Prepare a wide variety of products such as cakes, biscuits, pies, bread, etc. following traditional and modern recipes. - Able to produce all pastry/bakery products including, but not limited to, breads and rolls, croissants, etc. - Able to develop, design or create new ideas and items for pastry. - Create new and exciting desserts to renew hotel menus and attract guests. - Ensuring excellent quality of all desserts offered. - Ensuring the correct handling and temperature of all food products. - Coordinate the activities of your team. - Supervise and coordinate the preparation and presentation of the sweet section. - Check the quality of raw and cooked food products to ensure that standards are met according to HACCP rules. - Determine how the food should be presented and create decorative displays for the food. - Monitor the bakery's ingredient inventory and place appropriate orders within budget. - Check the quality of materials and the condition of equipment and appliances used. - Attend some meetings to suggest improvements. - Must have a positive attitude and the ability to work with a variety of people and in cooperation with colleagues efficiently and effectively. - Ensures compliance with HACCP regulations. - Operate and maintain all department equipment and report malfunctions. - Maintain cleanliness and organisation in the bakery. - Encourage and establish mutual trust, respect and cooperation between team members. - Act as a role model to demonstrate appropriate behaviour. - Ensure compliance with food hygiene, health and safety standards. - Guide and motivate your team to work as efficiently as possible. - Ensure culinary standards and responsibilities of the pastry team are met.
