Demi-Chef de Partie - 18/05/21

1) You are responsible for tasks given by the chef de Partie or by the Chef de Cuisine. 2) Preparation of the service: -- Manages both hot and cold preparations - cleans, washes, peels, cuts and cooks vegetables / fruits - prepares garnishes, cold sauces, soups, starters, desserts, salads, etc ... - helps the Chef de cuisine or Chef de Partie in preparing and sending dishes to different parts of the kitchen - Ensures order and cleanliness in the kitchen - Meets safety standards during his work presence - orders, receives and controls the goods under the direction of the Chef de Cuisine - preparation of canapés, appetizers, dishes, desserts, soups, sauces, rolls, snacks, etc ... - replaces colleagues - Gives suggestions for new preparations, dishes, presentation, etc ... - Is versatile and able to work independently in every kitchen service. - Cooking of meat, fish and poultry - Presents and garnishes the plates as directed by the chef
